Roasting coffee : a real skill!
As coffee-merchants, specialists at roasting coffee, we prepare
ourselves the green beans that we have selected among the best in
the world. Through delicate operations and thanks to our know-how,
we bring together all the qualities that you except from a cup of
coffee.
We give in it its flavour by roasting the green coffee beans: it means that they
are heated in machines called roasters, whose temperature is raised gradually
while being stirred constantly, under the close watch of our expert. When the
temperature rises above 100°C the beans turn yellow, and then light brown
the temperature reaches 150°C... It is only around 230°C that the beans
are really roasted and release their aroma.
This extremely delicate operation, which guarantees the perfect taste of coffee,
requires constant attention from the man in charge: it is thanks to his skill
and his familiar sense of smell of the changes of aroma that released by roasted
coffee that he will manage to turn green coffee into those brown, flavoured
beans.
